How To Flavor And Prepare Black-Eyed Peas

Black-eyed peas, also called cowpeas and cousin to the smaller field peas, probably came to America via the slave trade. They had more use as animal fodder before coming to the table of the two-legged. The beans themselves are beige in color, but have a black "eye" that gives them the name. You can buy them canned, fresh (frozen) or dried. 

Although more popular in the South, make these potassium and protein rich, fiber-filled peas unique to your own diet by spicing them with your favorite flavors. As with many legumes, they are neutral in taste and easy to enhance with seasonings. In the South folks like to add the flavor of crisp crumbled bacon, along with red or green bell peppers, chopped onions, chili powder and black pepper. To be authentic you should use ham hocks (or a ham bone) or fatback to aid in flavoring. It is the pork's fat and salt that add that special flavor. 

There are many recipes for the famous Hoppin' John dish served to celebrate a prosperous New Year. Here are some ideas and things to consider to get you experimenting no matter what the season. If you want to avoid the salty canned peas and avoid the pre-soaking, frozen is the way to go. Otherwise try the easy-to-store dry variety.

If you buy peas dry, you can quicken the cooking time by using a pressure cooker. They may take one to one and a half hours of simmering on a stove top (as do the frozen peas) compared to ten to eleven minutes in the cooker. Don't forget to soak dry peas overnight, but use fresh water before simmering. Cooked peas should be tender enough to squash with a fork. Check them after forty minutes, since some have thinner skins than others, and you don't want mushy peas.

Mix them with rice (half as much rice as peas) for a full meal and serve them with ham. Cook the rice separately fifteen minutes before adding it to the beans if simmering. Or you may cook the rice in a different pan while using a pressure cooker for the peas. Either way let the combined rice and peas simmer and blend their flavors together for an additional five minutes.

Other spices you might try with black-eyed peas are thyme, oregano, cayenne or red pepper flakes. Diced tomatoes and celery are often added. A Cajun or Creole spice blend is a great way to heat things up. Paprika or Liquid Smoke will give it that smoky flavor as will a tablespoon of molasses. Or add spices that you know you like either for their taste or nutrient value, such as cinnamon or cloves. 

Many spices supposedly reduce gas, including bay leaves, thyme, cumin, ginger, caraway and mint. Some swear that throwing a carrot in the pot will reduce the side effects, others drink orange juice with the meal. If you eat beans often enough, your body creates the enzymes that aid in digestion and, thus, reduce gas. The good news is black-eyed peas are one of the least problematic of the legumes as far as "gas production" is concerned.

Think of black-eyed peas as you do any bean and consider using them in salads, with Mexican dishes, on nachos or in any hearty stew or chili. Who knows? Yours just might be the winning entry in this summer's chili cook-off.

Just what is the best pressure cooker? Endeavouring to discover one specific answer is in fact close to unachievable. Why? since there are almost as many pressure cookers as there are users needs, and each user will look for a different set of criteria when choosing the best pressure cooker, for his or her requirements.

The choice to start cooking with a pressure cooker is sure to ease your cooking process on a daily basis and add new flavours and tastes to your mealtime. For this decision to purchase a pressure cooker to really have the proper impact however, you need to make sure you are getting the right tool, the best pressure cooker, that meets your specific needs as a cook. A wrong cooker will be only a hindrance in the kitchen.

Figuring out what cooker suits your needs and identifying a list of requirements that your product of choice needs to meet, will make the process of choosing a pressure cooker, easier and more enjoyable. Here's a list of 'preferences' that you might consider satisfying before you make a decision to get your very own best pressure cooker.


Pressure Cookers come in different measurements. From 4 quart to 30 quart, and with sets in between - two or three cookers of different sizes, in the same box. How to decide between those options? Just consider how many mouths you feed on a regular basis. Are you a single person, sometimes having one or two friends over for dinner? or do you cater for a family of 6 with never ending appetites? how many people will this product be used to cook for? don't forget to include guests and special occasions in your calculations, if they are a thing of habit in your household. If you only prepare food for 2-3 people daily, then a basic 4 quart cooker devoid of extras is more than likely your best choice. 

Assuming you are cooking food for 4-6 people, you oftentimes have guests coming over, and every meal consists of several courses and a plethora of food to choose from, then the multi-set / combi pressure cookers are probably a good option to consider. Having more than one pot which you can use to pressure cook food with, as well as a glass cooking lid and other essentials, lets you to prepare multiple foods in unison (think marinade in one pot, and some chicken in another - all quickly and efficiently prepared). This parallel cooking lessens time spent in the kitchen, and also helps minimize gas/electricity costs as you can cook a substantial amount of food faster.

If you are planning to do some canning quite regularly, then the larger up to 30 quarts pressure canners and cookers are what you should probably look at. Most of these cookers + canners are large in size and as a result weightier to deal with and maintain. They are not intended for the regular sized family, if they are not into canning, and are not usually the best solution for amateurs. Chefs and cooks who are familiar with preparing food with pressure cookers are probably a better fit for these large sized cookers / canners.


How routinely or scarcely you need to work with a your cooker will allow you to opt for the material that's most suitable for pot you are about to purchase. The stainless steel cookers are a whole lot more resilient, simple and easy to clean, look better and are scratch, warp and corrosion immune. But unfortunately, these will be more expensive. By contrast, the aluminium models conduct heat better and are usually cheaper, yet they get corroded and dented very easily.

The best pressure cookers are the stainless steel cookers with a steel - aluminium - steel base. This way, the product body is of the highest quality material and the aluminium sandwich base helps in conducting heat uniformly thus helping cook food faster and thoroughly. These pressure cookers can last more time, function to the best of their ability for many years on end and are easy to maintain. 


Consider what features you need when cooking a meal, before making a decision.

One crucial thing to consider is the pressure setting on your cooker of choice. Most foods demand a high pressure setting of 15 psi and a low one of 8psi. If the cooker provides both these settings, then it is an ideal choice. If you need to compromise on just one pressure setting, always opt for the high pressure setting of 15psi. Most recipes cook at 15psi, so not having a low setting will not harm your cooking in any way.

Price level:

Purchase prices for good cookers fluctuate based on the brand, size and variety. The premium solutions sell for over 200$, The multi-set cookers usually sell for just over $100, and the smaller sized cookers come at around $50. Pressure cookers are an expensive financial investment, but the ones worth the price tag deliver for a minimum for a period of 10 years. That is why, it is highly recommended to pay for precisely what you require.

It is often worth investing in the best pressure cooker you can afford, to ensure that it will last as long as possible and meet your needs, without the need to look for a new replacement, too often.

The first benefit that anyone will think of for using a pressure cooker is the speed in food preparation. It can speed up the cooking process up to 70% of the time compared to traditional style cooking. This is seen in simmering and preparing soup dishes.

I.The Oracle 

A. Hexagram fifty-eight is Dui, or Open. Further interpretations are The Joyous, Lake and Usurpation. Its lower and upper trigrams are also identical, being Dui: open, swamp or forest.     


B. The Judgment

   1. The Joyous. Success. 
   2. Perseverance is favorable.

C. The Image

  1. Lakes resting one on the other:
      a) The image of The Joyous.
      b) Thus the superior man joins with his friends

           For discussion and practice.

II. My interpretation 

A. "The Joyous"

Joyously having fun is the tune to accord with now. Amongst these celebrations there abides much talking to the excess of misunderstood clamor.  Talking to the tail of an arrow our words must at this time do so as such ---target; "Stright talk."

Don't push the downtrodden too far, because the compound effect of those past malignant demands will be mistakenly credited to your account as well, for no reason. Be straight honesty, then move on with the process of being joyous but, keep the busybody clamor down for the moment.

With this hexagram, we can see gladness to the extent that the crowd follows the lead of the spokesperson to the tune of a buffalo stampede type endeavor. All this is due to the deep interactions between the friends as they might set and examine the deep-held secrets within that particular group norm. This builds a sense of non-competitiveness within that group; the atmosphere is somewhat pleasant.

In sadness, the group will hold the same sentiment as when there are times of pleasure. Such is when the team, wins there is joy within that moment, but when the team loses, there is much talk about reconciliation. Same as when there are times of bereavement all involved or as a collective membership will be affected by that event, and naturally If in any case there is talk in that direction let that talk be short, gentle, sincere and honest –straight to the fact and not beat around the bush. Too much talk leads to trouble, folks.

Pleasure is sometimes due, but know your personal limits, such as marching to the tune of the drummer, let’s not forget the drummer at some point has to rest, or else the group will be out of step.

He avoids pretentiousness, and if there is an opportunity to pretend he is someone he is not, or that he is of a rank that he does not deserve, the person of integrity rejects such artificiality. He prefers to be who he is and present himself as he is, rather than gaining ground by being a fake.

2. [6] To turn one's entire attention to form and appearances betrays a certain egocenteredness. Such a man is not bent on accomplishing any great and substantial work, but only in having the appearance of someone who is important. He spends all his time and effort on cultivating that appearance rather than actually performing the necessary work. Only when his own accomplishments are coordinated with the image he portrays is he without blame.

3. [9] After a man has made a certain amount of advancement, he finds himself in very comfortable circumstances. He is pleased with himself, with his life, and with all the fine things that his life has brought him. It is easy, however, for the pleasantness of his existence to swallow him up, so that he abandons the efforts that are needed for him to continue to advance. He loses the enthusiasm of the determined effort that got him this far. But his entire future depends upon his breaking out of this stage of indolent self-satisfaction.

[6] A man is faced with a choice: to continue to pursue life in the fast lane with its flash and glitter, or to return to a simpler mode of living that includes more substantial relationships and opportunities to develop his mind and himself as a person. He knows instinctively that the superficial existence is not for a man of substance, yet there are many aspects of that life that are enjoyable and that he will surely miss. The opportunities for a simple but richer life are before him, and the choice is clear, even if reluctantly made.

5. [6] If a man withdraws from a life of ostentation to one of simplicity and substance, he may find that there are not many who share his sentiments. He wonders what he has to offer to those who do, and after taking inventory finds that he has very little. But this should not deter him. It is not the flashy, ostentatious things that impress real companions, but honest friendship, good conversation, and genuineness of spirit. And this illustrates the difference between the ostentatious and the real. The former companions have no mind things that matter, and the latter care for nothing else.

Top. [9] The sage has perfect beauty of form in everything he does. But this is beauty without ostentation, and appearance without pretentiousness. Rather than being an outward, added element, the graciousness of the sage reveals his inner self, so that everyone who comes in contact with him experiences him in depth and fullness. His simplicity, tranquility and clarity are a window revealing the sincere beauty of his inner being.
